What is there to resist. Just reduce your number of permanent employee to less than 50. So that no need to adapt to the new salary system...

Not that I am against living wages

 

5k/nt doesn't mean that hotel is able to deal with a significant wage increase without "killing them "

 

There are so many expenses that 5k/nt needs to cover

Having worked in the Hospitality industry for decades in the UK. Hotels there were the same importing cheap labour from Eastern Europe in order to be able to force wages down. London Hotels were paying about £10 an hour, can you imagine trying to live in or commute to London for that!
