Funny enough if you go past Kho san to Golden mount (wat saket ) then down  Mha Chai road theres a restaurant called "Tipsamai"  thats supposedly the premier Pad thai restaurant, its only a shop house but very popular

Yeah no city should ever do away with poorly built bars under a highway filled with prostitutes in the middle of their city

I loved all those places you mentioned

I walked past it one night and bought their chilli sauce which was good, I like a good pad thai but I don't seek it out on a regular basis. Then again last time I ate in Khao San Road it was a pad thai cooked by a very old lady who was the only place open in the whole street the time I was shooting (and she sold beer)

Funny enough, I didn't eat Pad Thai until around 15 years coming to Thailand 

 

I sort of perceived it as "tourist food "

 

Then I got it the 1st time from this fairly well-known Pad Thai lady in Kamala, she's been making only Pad Thai for 20+yrs

The very first time I came to Thailand was in 1982 and the first Thai food I ate was Pad Thai + Mango with sticky rice. In the afternoon also tried Durian and have  loved it all ever since which may partially explain in those days I was 72 kg and now I'm  87 kg

I just always heard tourists saying they love Pad Thai but never heard a Thai really speak about it

So never really tried it

Then I had it and loved it, but very picky with it also

I don't like it too wet, which some places catering to westerners seem to make it

I like it a but dry

 

As for me being a backpacker? I'm about the complete opposite of that

Although I wish I did the whole hostel scene when I was younger, I didn't know about it, then looked down on it when I started traveling at 25yrs old

Wish i hadn't..............

Some backpackers avoid touristy things  in an attempt to remain credible amongst the backpack community .

  Like, avoiding holiday makers at all costs

You might try the home editions, as many have been creating their own everyday versions for decades. 

For everyone that makes Pad Thai [and everything else] there's a different way of making it. 

Outside of the stereotyped signature dish.

I have a Thai food truck right outside my office, she only makes 4 items and her pad thai is exactly how I like it
