What do they mean vaccination status unknown. They were either vaccinated or not, unknown is not an option. Are they saying vaccination records are being registered.

That is the new euphemism for “not vaccinated”.

That way it’s not counted on any statistical list.

There could be more than a slight problem with the maths:

2,162 beds but 21,885 beds occupied.

That's an occupancy rate of over 1,000%.
