Thailand is ALL overrated, IMO

I would say Nan Province and Mae Kampong. Get close to nature. 

Also for those who are visiting or have visited Chiang Mai, head up to Doi Suthep early in the morning before sunrise for the monk prayer chants. And Wat Phat Lat for the jungle temple
