Thailand is not known for its food hygiene knowledge and legal standards. which at best are pretty poor.  I stay away from street food for that very reason and this story is not surprising.

I disagree, but understand your position. I'd say the vast majority of street food vendors have totally safe and acceptable food hygiene standards, with coolers for their meat and perishables and a good understanding of safe temperatures and holding practices.

Anecdotally, I know significantly more people who have been poisoned at hotels and/or nice restaurants in Thailand than street food vendors.

As someone with a good understanding of Thai food, personally I just watch the vendor's cooking process for one or two dishes before I make my decision about eating or moving on.

I don't think that I have ever seen any of that.  What I mostly see is a old, quite dirty mobile cart, no running water, food left out in the air, food prepared close to traffic and fumes, old food, no doubt out of date, poor quality meats and chicken. Yes, the occasional cool box with some ice, but no idea of cooking times, food prep or food storage. Maybe its better in the Cities, apart from the traffic, but out in the rest of Thailand its pretty much as I describe.  Not for me.

Everyone has different tastes

 

When I 1st went to Thailand I wouldn't eat street food

But eventually did and it is one of the best parts of Thailand for me....

 

As @ThaiFoodGuy said, just as many people get sick at hotel and restaurants

I have no problem with the taste of a lot of Thai food, just its prep and quality  Food Halls in shopping  Malls meet my needs, in a much cleaner environment.

Yes the food halls are absolutely outstanding 

Love them

 

And they seem to be getting better and better when they already were fantastic
